Chicken Kabsa


1 Kg Chicken (cut into 4-6 pieces)
2 Cups Basmati Rice
2 Onion finely chopped
3 Tomatos chopped
2 Tsp Ginger Garlic paste
2 Grated Carrot
1 Tsp coriender powder
1/2 Tsp red chilly powder
1/2 Tsp cumin powder
1/4 Tsp black pepper powder
1/2 Garam masala powder
1 Bay Leaf (Dried)
1 Lemon (Dried)
4-5 Cloves
4 Green Cardamom pods
1 Cinnamon Sticks
1/4 Cup Raisins
Salt to taste
Oil or Butter


How to make Chicken Kabsa


1. Heat oil in a pan. Add the all Whole spices (bay leaf, cloves, cardamom, and cinamon sticks) let them splutter for a min. Add onions and saute for 2-3 minutes or until the onions turn golden brown. Add Ginger garlic paste and fry for a minute.


2. Add Chopped toamtoes and all powdered spices (coriender powder, red chilly powder, cumin powder, black pepper powder and garam masala powder) Keep stirring and fry till the tomatoes are all mixed and mushy and the oil starts to separate.


3. Add chicken pieces and Salt as per your taste. Saute the chicken. Cover the pan and let this cook till the chicken pieces are tender. Remove the chicken pieces from the pan. Set aside.


4. Add 3 cups of water, grated carrot, Raisins and dried lemon let it boil. Add drained rice and check salt (Add salt if required).


5. Bring it to the boil. Reduce the heat, cover with lid, and simmer for 10-15 minutes.


6. Grill the chicken for 5- 10 minutes. You can fry it in the hot oil too to get a golden crispy texture.


7. Serve the rice with the chicken.
